Apricot Cake with Marzipan

A highlight during the apricot season: An apricot sheet cake, refined with marzipan.
Method
- Preparation time: 45 min
- 1 baking tray
Preheat the oven to 180°C (350°F) fan.
Mix the marzipan, icing sugar, and egg yolks until smooth.
Stir the room-temperature butter into the egg yolk mixture.
Beat the 4 egg whites with the caster sugar until stiff peaks form.
Stir the flour, lemon zest, baking powder, and milk into the egg yolk mixture.
Fold in the egg whites.
Spread the mixture onto a baking tray and top with halved apricots. The mixture covers about 2/3 of a tray.
Bake for 30 – 40 minutes. After 20 minutes, reduce the temperature to 160°C (320°F).
