Roast Pear with Marzipan-Cranberry Filling

Method

For the caramel sauce
Melt the sugar slowly and caramelize it until it turns from golden brown to copper. Do not stir during the process.
Add butter and whipped cream and stir to create a homogeneous texture. Add salt and simmer for a few minutes.
For the roast pears
Cut 4 pears in half at the upper third and core them with a spoon (do not throw away the fruit pulp!!)
Chop marzipan, cranberries and almonds and mix with 2 tablespoons of the fruit pulp. Fill pears with the marzipan mixture.
Place a piece of butter on the pear and roast in the oven at 180 °C / 356 °F (top and bottom heat) for 20 minutes.
